Instructions
Step 1
Cook chickpeas with liquid and the cumin until the liquid is reduced by half
Step 2
To a mixing bowl, add the tahini, lemon juice. Mix until the tahini paste becomes thick
Step 3
To the tahini and lemon paste, add the yoghurt along with the salt and mix well.
Step 4
When the chickpea water is reduced, strain the chickpeas over the bowl with the tahini and lemon paste. Add half the chickpeas to the bowl.
Step 5
Mash or blend everything that’s in the bowl
Step 6
When you get to your desired consistency, add the rest of the chickpeas, but reserve about 2 tbsp for garnish.
Step 7
Serve everything in a bowl, top with paprika powder, chopped parsley, pine nuts, feta, sundried tomatoes, rest of the chickpeas, olive oil, whatever.
