Instructions

Step 1
Heat the oil in a frying pan over a medium heat

Sauté the vegetables for 3 - 4 minutes until tender

Whisk the eggs in a small bowl

Pour the eggs over the vegetables and stir
Step 5
Stir frequently to scramble the eggs with the vegetables
Step 6
Season with salt and pepper, top with the tomato and avocado
