Instructions
Step 1
In a large stockpot render the bacon by cooking it slowly and allowing it to release the fat. Sweat the Onion, Celery, Carrots , and Garlic in the fat without browning them.
Step 2
Add the stock, peas Ham hock, Bay leaves, Thyme, Peppercorns. Bring to boil, reduce to a simmer and cook until the peas are soft, approximately 1-1 1/2 hours.
Step 3
Remove the Bay Leaves, Ham hocks and bones. Puree' the soup by passing it through a food mill or blender. Return the blended soup back to the pot.
Step 4
Remove the meat from the bones, cut it into a medium dice and add to the soup. Simmer and serve. Add hot chicken stock if soup is too thick. Season to taste.
