Instructions

Step 1
Pre-heat the oven to 200 degrees
Step 2
Purée the oil, lime juice and lime zest, coriander and garlic in a food processor until smooth
Step 3
Place the chicken on oil on a baking tray, pat dry and season with salt and pepper
Step 4
Spread the coriander and lime mixture and bake in a pre-heated oven at 200 degrees for 20 - 25 minutes
