Instructions
Step 1
Heat Oil and sweat Onion, Carrots, Celery for 10 minutes in a large stockpot.
Step 2
Add Wine, water, Bay leaves, Thyme, and crushed peppercorn.
Step 3
Bring mixture to a boil, reduce to simmer and cook for 45 minutes.
Step 4
Skim stock as needed of froth.
Step 5
Strain and refrigerate. Use when needed.
