Ingredients

Cookies
7 Tbspoat flour
½ cupalmond flour
⅓ cupmaple syrup
½ cuppeanut butter
you want it to be runny, and not super thick - you can sub for other nut butters as well
1 tspvanilla extract
sea salt
Filling
Instructions
Step 1
Mix cookie ingredients together, starting with 7 tbsp of oat flour, and adding another if the dough is too sticky (you want it moist though).
Step 2
Form the dough into balls & place on a lined cookie sheet (batter should make 16 small cookies, 2 small cookies used for each sandwich).
Step 3
Use a fork to make a cross cross pattern on top, flattening them down.
Step 4
Bake at 350F for 11-12 mins until slightly golden around the edges. Let cool - they firm up as they cool!

Step 5
For the filling, mix together the peanut butter and maple syrup.
Step 6
Add a little filling to one cookie and sandwich another cookie on top. Store in the fridge
