Step 1
Preheat your oven to 200°C or 400°F.
Step 2
Season the chicken thighs with salt, pepper, paprika, oregano and a drizzle of oil, then flip it over and season the other side.
Step 3
Rub the seasonings into the chicken thighs, then set them aside.
Step 4
Wash and peel your potatoes. Cut them into cubes. One potato would turn into 12 cubes. Set them aside.
Step 5
Clean and peel your carrots and cut them diagonally, about a quarter-inch thick. Set them aside.

Crush and chop your garlic cloves. Crushing the garlic before chopping it releases more aroma. Set them aside.

Chop your onions into small diced pieces and set them aside.
Step 8
Wash and then chop a handful of parsley. Set them aside.

Heat up your skillet pan and add butter, let the butter melt before adding the chicken thighs. Sear your chicken thighs on medium heat for 5-6 minutes until lightly brown and crispy. Turn over and cook for another 3-4 minutes.

Remove the chicken thighs from the pan once done cooking and set them aside. Don't turn off the heat.

In the same pan, add the chopped onion, then sauté over medium heat for 2-3 minutes. Add your potatoes, and carrots, mix well and sauté them for 10 minutes.

While that’s cooking, heat up another skillet pan. Add honey, lemon juice, sweet chili sauce, soy sauce, and Dijon mustard, then give them a good stir. After boiling, cook over low heat for about 2 minutes until bubbly and has a thick consistency.

In the first skillet pan, add your parsley and garlic then add a pinch of salt. Give them a nice toss until all of the ingredients are well combined.

Put the chicken thighs back to the first skillet pan along with the potatoes and carrots, then drizzle the sauce all over chicken and potatoes.

Place your skillet pan in the preheated oven and let them bake for about 25 minutes to 35 minutes at 200°C or 400°F.

Garnish some fresh parsley on top of the chicken. Serve and enjoy!
