Ingredients
4 servings

1sweet potato
cubed

0.25white onion

1garlic bulb
top cut off, or broken into individual garlic cloves

olive oil

1 blocksilken tofu

1 cuppasta water
reserved

½ tsporegano

½ tsppaprika

1 tspdried rosemary

1 Tbspgochujang paste
more depending on how spicy you want it

0.5lime
just the juice

salt

pepper
to taste

1 boxpasta
Instructions
Step 1
Place the sweet potato cubes, onion, and garlic on a baking sheet. Drizzle with olive oil, salt, and pepper and bake at 400F for 40 minutes.

Step 2
Cook pasta according to directions and drain, reserving some pasta water to thin sauce if needed.

Step 3
Add the roasted veggies to a blender along with the rest of the sauce ingredients and blend until smooth.

Step 4
Pour over the cooked pasta and toss until evenly distributed. Add more salt & pepper if necessary. Top with fresh or dried parsley and enjoy!
