Instructions

Step 1
Preheat over to 350 degrees. line a 12-well muffin pan with liners or spray the wells with cooking spray
Step 2
In a blender combine the eggs, almond flour, oats, maple syrup, oil, baking powder, cinnamon, vanilla, and almond extract. Blend the ingredients on high for about 20-30 seconds.
Step 3
transfer the batter to a large bowl and gently stir in the blueberries
Step 4
Divide the batter evenly among the muffin wells. bake for 20-25 minutes, until a toothpick comes out clean.
Step 5
Let the muffins rest for 5 minutes, then transfer to a cooling rack.
Step 6
Storage: Store muffins in a sealed container in the refrigerator for up to 1 week, or freeze for up to sick months.
