Mighty Morning Muffins (Super Foods for Super Kids Cookbook)

Note: if you don't have dates, you can try subbing for 1/3 cup of raisins

Instructions

Step 1
Preheat oven to 375°F.
Step 2
Blend. Combine the spinach, bananas, dates, yogurt, canola oil, and eggs in a food processor or blender and blend on low for 1 minute and then blend on medium until all ingredients are blended together. Pour into mixing bowl.
Step 3
Add dry ingredients. Add the flour and baking powder and mix until you can't see the while of the flour anymore.
Step 4
Scoop batter into muffin tin. Grease the cups of a 12-muffin tin and place about 1/3 cup portions of the batter into the cups.
Step 5
Bake muffins for 20-22 minutes, or until a toothpick inserted into the middle of a muffin comes out clean. Let cool and enjoy!
