Tawa (Tepsi)

Tawa (Tepsi) is a delicious eggplant and veggie casserole. I added chicken Of course you can add beef, veal, lamb or skip the protein and make it vegetarian. It’s delicious served with rice or just eaten with naan.

Instructions

Step 1
1. Cut the leg quarters in half, put them in a bowl and season with the spices. Salt, black pepper, garlic powder, paprika, cayenne pepper and lemon juice. Set them aside.

2. Peel, wash and cut the potatoes into rings. Wash and cut the eggplants into small slices. Peel, cut the onions, cut the peppers and tomatoes.

3. Put the oil in a pan on high heat and pan fry all the vegetables potatoes, eggplant, onion and peppers.
Step 4
4. Next In the Same Pan sear the chicken for about 4 minutes per side and remove from pan.
Step 5
5. Sauce- Next turn down the heat, add in the minced garlic and tomato paste and cook for a couple of minutes. Add in the seasonings chicken bouillon, salt, black pepper, water and stir.
Step 6
6. Start assembling the casserole by layering all the veggies and chicken, pour the sauce over, cover with parchment paper or foil.
Step 7
7. Put it in a 400° preheated oven and bake for 40 to 45 minutes and enjoy with a side of rice or with bread.
