Instructions

Step 1
Preheat the oven to 200’C and line your baking tray with greaseproof paper
Step 2
In a large bowl, add your flour and butter and a pinch of salt.
Step 3
Rub the butter between your fingertips until the mixture looks like sand.
Step 4
Add the sugar and mix with your fingers so it is fully combined
Step 5
Add the egg and squeeze the mixture in your hands until it forms a soft ball. If it won’t come together add some water (1 teaspoon at a time) until it does.
Step 6
Divide your mixture into 12. Roll each into a ball (about the size of a golf ball) and place on your tray. If you wish to roll each ball in the extra sugar, do it at this point.
Step 7
With your thumb make a well in the centre top of your biscuit.
Step 8
Add a little jam/ filling in the hole.
Step 9
Bake for 10 – 12 minutes until brown and slightly risen.
Step 10
Take out the oven and leave to cool for as long as possible (at least 5 minutes) before putting into your container.
