SPICY SESAME NOODLES! All you need is ten minutes for the most intensely-rich bowl of 🍜 bursting with nutty, creamy and umami-rich flavours! Full recipe below (apportioned for two) Cook any noodles of choice; drain and reserve the starchy cooking water. Immediately toss the noodles with a splash of sesame oil to prevent it from clumping and set aside. In a heat proof bowl, mix together: - 2-3 cloves of garlic, minced - 1/2 tbsp ginger, finely chopped - 1 tbsp gochugaru (crushed red chilli flakes) or chilli flakes - 2-3 tsp sesame seeds - 2-3 tbsp scallions Pour 1.5-2 tbsp hot sesame oil on top and let it sizzle. Give it a mix, then stir in: - 3 tbsp light soy sauce - 1 tbsp dark soy sauce - 1.5 tbsp rice vinegar - 1.5 - 2 tbsp sesame paste - 1/2 - 1 tbsp peanut butter - 1 tbsp black tea Stir it will, then add a splash of the starchy noodle water and a dash of brown sugar/ honey. Mix until your sauce comes together with a smooth consistency. Feel free to adjust according to preference, for instance adding more sesame or peanut butter for a nuttier sauce etc. Pour the sauce over the noodles and serve it cold , garnished with sliced cucumbers, scallions and/or sesame seeds ENJOY and don’t forget to tag me when you try this at home!
