Step 1
Mince garlic and finely dice onion, carrot, capsicum and zucchini. Heat oil in a pan over medium heat. Once hot, add the chopped veggies and saute for 6-8 minutes, or until softened and fragrant. Add the tomato paste and cook for 2 minutes, or until the paste has darkened slightly. Next, add tinned tomatoes, stock, basil, salt and pepper. Bring to a boil then let simmer for

Meanwhile, bring a pot of salted water to boil and cook pasta until al dente, then drain and return to the pot.
Step 4
Transfer sauce to a blender and bend until smooth and creamy, then pour over the cooked pasta and stir until well-coated. Feel free to add a dash of pasta water if the sauce is too thick.
