Black bean Bolognese with Courgetti

Ingredients

1carrot
2celery sticks
1sweet potato
2 Tbspcoconut oil
1white onion
large
2garlic cloves
crushed
2 tspground cumin
1red chilli
save some to sprinkle on at the end
1 tspsmoked paprika
1 tspdried oregano
2cans of chopped tomatoes
2cans Kidney beans
cooked, or black beans
1 Tbspraw cacao powder
250mlvegetable stock
freshly made no sugar, no preservatives
1 tspsalt
2courgettes
Instructions
Step 1
Chop the carrot, celery, and sweet potato into cubes or dices.
Step 2
Heat the coconut oil in a large pot, throw in the onion, garlic, cumin, chilli, smoked paprika and oregano. Cook for a few minutes and add a pinch of salt. Throw in the other veg and sauté for a few minutes.
Step 3
Next, pour in the tomatoes, beans, cacao, stock and another pinch of salt. Cook for 1 hour until the beans are soft and flavoursome. Just before it’s ready, spiralize your courgettes into ribbons and steam for 2 minutes.
Step 4
Plate the bolognese and courgetti together and top with freshly chopped chilli.
