Ingredients

1onion
diced
1capsicum
diced
1zucchini
diced
3 Tbspcurry powder
or paste πΆοΈ
1 Tbspgarlic π§
crushed
1 Tbspginger π
crushed
1 bspchilli powder
optional
1can coconut cream
4chicken thighs
cut into bite sizes
salt
pepper
to taste
Instructions
Step 1
1. Toss the onion, capsicum, and zucchini into your air fryer with a pinch of salt and pepper and a dash of olive oil. Give it a good shake, and let it cook at 200C for 10 minutes.
Step 2
2. In a separate bowl, mix the chicken pieces with the garlic, ginger, and 1 tbsp of the curry powder/paste.
Step 3
3. Once your veggies are nicely roasted, add them back to the mix, along with the coconut cream and the remaining 2 tbsp curry powder/paste. Stir well.
Step 4
4. Add in the seasoned chicken, give it a final stir, and pop the whole thing back into the air fryer for 30 minutes, stirring every 10 minutes. And there you have it - the perfect Air Fryer Chicken Curry! π
