Instructions

Step 1
* In a small bowl or glass, combine lukewarm water, sugar, and instant yeast. Mix well and set aside for 10 minutes to activate the yeast.In a large bowl, sift the flour and add the salt. Stir to combine.Pour the yeast mixture into the bowl of flour and salt. Stir everything together using a spoon until it starts to come together. Then, continue kneading the dough by hand for a few minutes until a soft dough forms. Avoid adding extra flour; the dough should remain soft.
Step 2
* Place the dough back in the bowl and coat it with 1 tablespoon of olive oil. Cover the bowl with cling film or a clean kitchen towel and let it rise in a warm place for 1 hour.
Step 3
* Once the dough has risen, grease your hands with olive oil and transfer the dough onto a working surface. Knead it for a few minutes and form it into a ball.
Step 4
* Divide the dough into 4 equal parts and form each one into a ball again.
Step 5
* Working with one piece at a time, flatten the dough using your hands (keep the rest of the dough covered to prevent it from drying).
Step 6
* Place 1tbsp shredded mozzarella and 1tbsp chopped coriander in the middle of the flattened dough. Add salt and pepper to taste.
Step 7
* Fold the edges to form a ball again, making sure it is securely sealed. Then, using a rolling pin, roll the dough into a thin circle and set it aside, covered with a towel, while you work with the rest of the dough.
Step 8
* Heat a frying pan on high heat (no need to add any oil). Place the flatbread onto the pan and wait until it rises, then flip it. You may need to flip it a few times to ensure even cooking.
Step 9
* Transfer the flatbread onto a plate and place a small piece of butter on top while it's still hot. Repeat the process with the remaining dough.
Step 10
* You can use a brush to spread the melted butter over the flatbread.
