Step 1
In a bowl, combine flour, yeast, sugar, and salt. Mix well, then add water and olive oil, and mix until well combined.

Cover and let it rest for 20 minutes.

Perform 4 stretch and fold actions, then cover and let it rest for another 20 minutes.
Step 4
Grease the baking tray generously with olive oil and transfer the dough onto it. Spread it evenly using your hands and fingertips.

Cover and let it rest for 30 minutes.
Step 6
Preheat the oven to 200°C (fan). Top the dough with tomatoes, pepper, shallots, and olives. Sprinkle with Nigella seeds, salt and spray with olive oil.
Step 7
Bake for 25 minutes or until golden, then remove from the oven and while still hot, top with mozzarella cheese and sprinkle with rosemary.
