Mississippi chicken pot roast

Serve chicken breasts whole, shredded, chopped. However you prefer. Serve with green beans, salad or over mashed potatoes. It makes a great gravy with a little kick. You can thicken it with a cornstarch slurry if you like.

Ingredients
4 servings

4chicken breasts
large

4carrots
medium, sliced

2 poundsgold potatoes
cubed

1white onion
small, chopped
4peperonchini peppers
sliced
⅓ cupjuice from peperonchini jar

1 packetranch seasoning

1 packetau jus

1 stickbutter

2 Tbspminced garlic
Instructions
Step 1
Layer onion, carrots and potatoes at bottom of slow cooker.
Step 2
Add minced garlic and half of pepper juice
Step 3
Add chicken breasts on top of veggies.
Step 4
Sprinkle au jus and ranch dressing packets over chicken.
Step 5
Top with remaining juice and pepper slices. Then add whole stick of butter on top.
Step 6
Slow cook on high for 4-6 hours or low 6-8 hours.
