Instructions
Step 1
Start by cooking your pasta. When done, strain it, return it back to the pot, and set aside.
Step 2
While your pasta is cooking, prepare your spinach sauce by adding your bag of fresh spinach into a large blender, along with 16 ounces of cottage cheese, 1/2 cup milk, 1/4 cup grated parmesan cheese, 2 Tbsp lemon juice, 1 tsp thyme, 1 tsp oregano, and a little salt and pepper. Place your lid on and blend until smooth. Set aside.
Step 3
Heat a large skillet over medium-high heat and add in 1 Tbsp of olive oil. Add in your chopped onions and sliced mushrooms and cook for 3-4 minutes, or until your onions are translucent.
Step 4
Add your minced garlic in with your onions and mushrooms and mix together. Cook for about 60 seconds.
Step 5
Reduce the heat to low and add your creamy spinach sauce into the skillet with your onions and mushrooms. Mix together, cover, and let this simmer for 4-5 minutes on low.
Step 6
Once your sauce is done simmering, remove the lid and pour your sauce into the pot with your cooked pasta. Mix well.
Step 7
Give your pasta a taste, and add salt and pepper to preference.
Step 8
Portion out into your meal meal containers, top with a little shredded parmesan cheese, and enjoy!
