Instructions
Step 1

Submerge peeled white beans in 3/4 cup water in an airtight container. Leave in a warm dry place for 90 minutes
Step 2

Wash the beans by filling bowl with water and sieving out the skin until water runs clear. Leave 2 tbsp of water
Step 3

Blend eggs, beans and a little extra water as needed until you reach correct texture
Step 4
Dice scotch bonnet and start defrosting onions. Start heating up oil until it's spitting
Step 5
Mix in the remaining ingredients
Step 6
Fry the batter until golden brown on one side then flip and fry until golden brown on both sides. Press with a fork as necessary to ensure it is fully cooked through.
Step 7
Remove the akara and place on a plate covered with tissue to drain the excess oil
