Karaage
1 lbboneless skinless chicken thigh
cut into bite size
1 tablespoonsake
2 tablespoonssoy sauce
1 teaspoonsesame oil
1 tablespoonginger
grated
1clove garlic
minced
1 cuppotato starch
cooking oil
for frying

Instructions
Step 1
In a ziplock bag, combine the chicken, sake, soy sauce, sesame oil, ginger, and garlic. Mix well. Marinate for at least 15 minutes in the fridge.
Step 2
Drain extra marinate mix in a bowl, and coat chicken with potato starch.
Step 3
Heat the oil to 340˚F (170˚C). Fry the chicken until golden brown and fully cooked, 5-7 minutes.
Step 4
Combine water, dashi, sake, soy sauce, mirin, and sugar in a small pan and bring a simmer over high heat.
Step 5
Add onion, and cook for about 3 minutes. Add chicken karaage, and cook a minute.
Step 6
Reduce heat to a bare simmer. Beat eggs lightly in a medium bowl, and pour eggs into the pan.
Step 7
Cover and cook until the egg is cooked.
Step 8
Put egg and Karaage mixture over rice, and garnish with green onions.
