Air-fryer salmon “nuggets”

Air-fryer salmon “nuggets” 😮‍💨 I seriously can’t get over that crunch! For my salmon fans, this one’s for you. For my plant based pals, please feel free to swap the salmon for tofu 🌱 Here’s how to make your own salmon bites (I found this made ~5 serves, however individual requirements will vary): ✨ 1x 460g packet salmon (skin off) ✨1 x XL eggs ✨1- 1.5 cups panko bread crumbs (as needed) ✨1 flat tsp paprika ✨1/4 tsp chilli flakes (optional) ✨1/2 tsp onion powder ✨Herbs of choice (optional) Serving suggestion (all optional): ✨Long-grain rice cup, for convenience ✨Edamame, umami (thawed) ✨Veggies of choice (I used red cabbage, baby cucumber, carrot, and spring onions) ✨ 1/4 avocado, sliced Dressing (makes 1 serve): ✨ 2 tsp salt reduced salt sauce ✨ 1 tablespoon rice wine vinegar ✨ 1 tsp honey / maple/ sweetener ✨ 1/2 tsp Sesame seeds (optional) Method: 1. Cut salmon pieces into smaller cube sized serves. 2. In a small bowl whisk the egg until well combined. Coat salmon, with egg, as desired (either in bowl of container). 3. Individually toss salmon cubes in the Panko bread crumbs until coated. 4. Transfer coated salmon into an Air-fryer tray (or oven tray, just cook for slightly longer is using the oven). Cook for ~8-10 minutes at 190 degrees Celsius or until golden and crispy. 5. Transfer salmon into a bowl with desired ingredients- I served mine with some rice, veggies and the dressing above.
