Instructions
Step 1
Grease baking tray. Cut tomatoes in half, remove tough bit by stem, place on baking tray with skin up, brush them with oil and salt, place in oven 180C for 30-35 min.
Step 2
Dice onion and fry til soft – add brown sugar to caramelise if desired.
Step 3
Chop garlic and add to onion, then add tomato puree. Add some parmesan if desired.
Step 4
Cook spaghetti.
Step 5
Add tomatoes and liquid to the onion, garlic and puree. Liquidise sauce. Add basil and a little pasta water and re-liquidise a little. Reheat sauce when ready to serve. Add more parmesan if desired.
Step 6
Freeze leftovers.
