Instructions

Step 1
Place a frying pan over a medium to high heat and add the olive oil. When the oil is hot, but not smoking, crack an egg into a cup and slide it into the oil (maximum of 4 at one time). Take care that you are not splattered by the hot oil. The oil should be hot enough that the edges of the white start bubbling straightaway as it hits the pan. Fry the eggs for 1½–2 minutes, or until the white is very crispy and golden around the edges and puffed up around the yolk. If the edges are getting too dark, turn the heat down slightly. Transfer to a plate, making sure to drain any excess oil. Season liberally with salt, cumin and chilli.
