Instructions

Step 1
1. Salt short ribs the day before 2. Sear them in pan on all sides 3. Add onion, celery, and carrot to the pan, sauté 4. Add salt, garlic, and tomato paste 5. Add whole bottle of wine 6. Add stock so that short ribs are covered 3/4 of the side 7. Add bay leaves, bring to a simmer 8. Cover, and cook in oven at 325 for an hour 9. Take out and flip ribs, cook for another hour 10. Once tender, remove from pan. For sauce: 1. Strain veggies from sauce, add back to pot 2. Simmer and reduce until thick enough to coat the back of a spoon
