Ingredients

2 cupsflour
2 tspbaking soda
2 tspcinnamon
¼ tspnutmeg
½ tspsalt
3eggs
large
1 cupvegetable oil
2 cupswhite sugar
3 cupsshredded carrots
FOR THE FROSTING
Instructions
Step 1
Preheat oven to 350°F. Grease a 9″ round cake pan.
Step 2
In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg and salt.
Step 3
In another bowl, beat the eggs then mix in the oil and sugar. Stir in the carrots.
Step 4
Add the dry ingredients to the wet and mix just until combined – don’t overmix!
Step 5
Pour batter into the greased pan and bake for 45-50 minutes, until a toothpick comes out clean. Let cool completely before frosting.
Step 6
Beat together all the frosting ingredients until light and fluffy. Spread onto the cooled cake.

if you want to create a two-layer cake like picture, you can simply double the recipe and bake in two separate 9″ round cake pans.
Step 9
Once both cakes are baked and cooled completely, place one layer on your serving plate and spread a portion of your frosting on top. Then place the second layer on top of the frosted first layer and proceed with frosting the top (and the sides too, if you like).
Step 10
Just keep in mind, if you decide to create a two-layer cake, you may need to adjust the amount of frosting you make to ensure you have enough for between the layers, on top, and around the sides.
