Sincronizadas are a Mexican classic and a very popular light meal or snack. Sincronizadas consist of ham slices and grated cheese placed in between two wheat tortillas, then warmed up in a pan or griddle to lightly toast the outside of the tortilla and gently melt the cheese inside, you could say is the Mexican version for a ham and cheese toastie. The name comes from the word in Spanish “sincronizar”, which translates into “to synchronize” alluding to how it brings together 3 simple ingredients to create something delicious. The Mexican ham and cheese quesadillas are often served for breakfast, but also enjoyed for lunch or even as a light dinner. Sincronizadas are thought to have originated in Mexico City in the 1960s. They were originally sold as street food, but they quickly became popular and are now served in restaurants and homes all over Mexico and other parts of the world. What you need to make sincronizadas: Tortillas: corn tortillas or wheat tortillas, both can be used, most commonly prepared with Soft Tacos or Burrito Wraps. Ham: cooked ham sliced thinly. Cheese: Cheddar, Monterrey jack or Chihuahua-style cheese in Mexico, but any good melting cheese will do the job. Favourite toppings for sincronizadas: Salsa, pick from our selection of Gran Luchito Tomatillo, Mango Habanero or Chipotle Salsa. For extra heat try adding Gran Luchito Fire Roasted Serranos. Pico de gallo. Guacamole.

Instructions
Step 1
Heat up a non-stick large pan over medium heat.
Step 2
Place a Burrito Wrap over your kitchen counter and add half of the grated cheese, then top with 2 slices of ham and finally top with another wrap. Repeat the same process with the remaining wraps, cheese and ham.
Step 3
Place one sincronizada at a time over the hot pan and let it get lovely and toasted on both sides and the cheese to melt, this takes about 5 minutes.
Step 4
Once the sincronizada is ready, remove it from the pan and place it over a chopping board, add slices of avocado and Tomatillo Salsa to taste. Cut into four pieces and enjoy, repeat the same process with the remaining sincronizada.
