Instructions

Step 1
Preheat oven to 400 F

Grease a 9 x 13 casserole dish

In a small bowl, mix together the olive oil, Ranch seasoning, pepper, and paprika. Whisk, then set aside.

Cut up potatoes, onion, and chicken breast into bite-sized pieces.

Pour the seasoning mixture over the potatoes, onion, and chicken. Mix until thoroughly coated.

Add to the casserole dish

Bake for 45 minutes.

Then add cheddar cheese and bacon.

Cook for another 10 minutes

Garnish with scallions and sour cream
