Instructions

Step 1
Preheat oven to 400
Step 2
Lightly spray a 9x13 casserole dish
Step 3
In a small mixing bowl combine olive oil, dry ranch seasoning, black pepper, and paprika. Wisk together and set aside

In a large mixing bowl combine potatoes, chicken breast, onion and the olive oil mixture.
Step 5
Mix together and pour into the casserole dish.
Step 6
Bake for 45 minutes uncovered
Step 7
When finished baking , sprinkle shredded cheddar cheese on top and bacon. Cook uncovered another 10 minutes.
Step 8
Garnish with sliced scallions and sour cream
