Instructions

Step 1
Oven 500, rack lowest position, preheat baking sheet on rack.
Step 2
Trim bottom inch of asparagus and discard. Peel bottom halves of spears until white flesh is exposed. Toss with 2 Tbsp oil, salt, and pepper.
Step 3
Transfer asparagus to heated sheet and spread into an even layer. Roast until bottom sides of spears are browned and tops are vibrant green, 8-10 min. A paring knife inserted into the thickest part should meet little resistance. Transfer to serving platter and drizzle with reserved oil.

Gremolada (optional)

Step 4
Mix all Gremolada ingredients in a bowl. Serve over prepared asparagus.
