Step 1
Heat olive oil (small amount) in a deep pot

add 1/2 an onion with a pinch of salt
Step 3
sear for 2 mins
Step 4
add 2 or 3 cloves of chopped garlic
Step 5
sear for another 2 mins
Step 6
add 8 or 10 small baby tomatoes
Step 7
add 3 or 4 strands of red pepper
Step 8
Simmer for 2 mins
Step 9
add:
1/3 cup beer
1/2 hard chicken stock cube
1 bay leaf
Step 10
add chilli flakes (only small amount, can always add more later!)
Step 11
mix mix mix!
Step 12
Add meatballs or chicken
Step 13
Add water until it covers the meatballs / chicken
Step 14
leave to cook
Step 15
Season with salt and pepper when taste testing
Step 16
Serve with rice or pasta
