Ingredients

For the salad
1 headcauliflower
small, broken into small florets
4 tablespoonsolive oil
3cloves garlic
minced
1 teaspoonkosher salt
½ teaspoonfreshly ground black pepper
1 cuporzo pasta
¼ cupred onion
thinly sliced
1 cupcrumbled feta cheese
⅔ cupdried cherries
4 cupsbaby spinach
For the dressing
3 tablespoonsextra-virgin olive oil
3 tablespoonsfresh lemon juice
1 teaspoonhoney
1 teaspoondijon mustard
kosher salt
to taste
black pepper
to taste

For the salad
Step 1
Preheat the oven to 400 degrees F.
Step 2
In a bowl, toss the cauliflower with 3 tablespoons of the olive oil, the garlic, salt, and pepper. Spread on a large baking sheet and roast until tender and cauliflower is slightly charred, about 20-25 minutes. Let cool and set aside.
Step 3
Meanwhile, in a pot of salted boiling water, cook the orzo until al dente. Drain in colander, rinse under cold water, drain well, and toss with the remaining 1 tablespoon of olive oil.
Step 4
In a large bowl, make the dressing. Whisk together the olive oil, lemon juice, honey, mustard, salt, and pepper. Add the cooked orzo, roasted cauliflower, red onion, crumbled feta cheese, dried cherries, and cooked shrimp. Toss until well coated with the dressing. Add the spinach and toss one more time. Taste and season with more salt and pepper, if desired. Serve.
For the shrimp
Step 5
Place the butter in a large pan and melt over medium high heat. Add the shrimp and season with salt, pepper and Italian seasoning.
Step 6
Cook for 3-5 minutes, stirring occasionally, until shrimp are pink and opaque.
Step 7
Add the garlic and cook for one more minute.
Step 8
Stir in the lemon juice and parsley, then serve.
