Ingredients
5 servings
1kgmini white potatoes
1 ½ cupsfresh corn
or frozen
1shallot
large, minced
⅓ cupparsley
fresh, chopped
1bell pepper
1 stickgarlic butter
1 ½ cupsgrape tomatoes
1 tspchili flakes
2 tsp dried Italian herbs
Instructions
Step 1
First put a large pot of water on high heat. While waiting for it to boil: cut the mini potatoes in half and set aside.
Step 2
mince the shallot, dice the pepper, chop the parsley. Save some parsley aside for garnish and Add the rest in. Add together in a large bowl with all the other ingredients, save for the potatoes.
Step 3
When the water is boiling add the potatoes , reduce to medium high heat and cook until soft but not mushy. About 10 minutes
Step 4
When the potatoes are done, strain the water and add them to the bowl with everything else while they are still hot. The hot potatoes will melt the butter.
Step 5
Season well with salt and pepper, then take a spoon or spatula and mix well until all the butter is melted and combined and it smells fragrant.
Step 6
Serve and garnish with the remaining parsley. Enjoy!
