1red capsicum
chopped

1 cupcherry tomatoes
cut in half

¼ cupfresh basil
or parsley, chopped

2 cupcucumber
finely chopped

½ teaspoonsalt

1lemon
juiced and a little zest

1 tablespoonolive oil

300gcan chickpeas
drained and rinsed
To serve
Instructions
Step 1
Place the bulgur wheat in a bowl
Step 2
Pour the boiling water on top
Step 3
Cover and let stand until the water is absorbed, about 30 mins
Step 4
Drain carefully
Step 5
Add the remaining ingredients and mix together
Step 6
Serve on a lettuce leaf or use to fill a pita bread
