This plate just screams summer! I love peaches, tomatoes, and cheese, so why not put it all together?! The contrast between the hot and cold is fantastic combined with all the flavours. Give it a try before the season is over!

Instructions

Cherry Tomato Bruschetta

Step 1
Slice cherry tomatoes in half.
Step 2
Thinly slice the basil.
Step 3
Crush garlic with a garlic press.
Step 4
Add it all to a small bowl along with extra virgin olive oil and salt and pepper.

Grilled Peaches

Step 5
Preheat a grill pan to medium heat and slice peaches.
Step 6
Place peaches on the grill pan and drizzle a bit of oil on the top (around 1 tbsp).
Step 7
Grill both sides for about 4 minutes each or until you see nice grill marks. Set aside on a plate.

Grilled Ciabatta

Step 8
In the same grill pan on medium heat, drizzle olive oil on the ciabatta slices on both sides.
Step 9
Grill the slices of ciabatta until lightly toasted and has nice grill marks.
Step 10
Rub the warm slices of bread with a sliced piece of garlic to infuse it with flavour. This is optional but I love to do this.

Assembly

Step 11
In a large serving dish scatter the peaches evenly.
Step 12
Spoon over the bruschetta mixture on top of the peaches.
Step 13
Tear apart the fresh mozzarella and scatter.
Step 14
Drizzle a bit more olive oil on top.
Step 15
Season with crushed chili flakes and ground pistachios.
Step 16
Drizzle balsamic glaze. Serve with warm ciabatta.
