250grice noodles

200gcooked prawns

1carrot
grated

1cucumber
small thinly sliced
80gunsalted chopped peanuts
For the dressing
Instructions
Step 1
Soak the rice noodles for 10 minutes in a large pot with 2 liters of boiling water.
Step 2
Drain the noodles, run some cold water from the tap over them, and drain them again.
Step 3
Transfer the noodles to a big bowl, and add the shrimps, the carrot, the cucumber and the cilantro, and stir.
Step 4
To prepare the dressing, mix in a little pot the vinegar, the sugar and the garlic and boil it; let it simmer for 3 minutes to reduce the liquid.
Step 5
Transfer this to a separate bowl and add the sriracha, the fish sauce or soy sauce, and the lime juice. Add the oil, stiring slowly and season with salt and pepper
Step 6
Dress the salad and finally sprinkle the peanuts on top.
