Instructions

Step 1
Preheat oven to 200°C
Step 2
Heat a large casserole dish on the hob with a drizzle of vegetable oil. Add the pork mince and cook for 1-2 minutes or until browned

Deseed and chop the red pepper. Crush the garlic cloves with the flat side of a knife. Add both to the pan with 150ml boiled water. Add the soy sauce, mirin, stock cube, and 3/4 of the gochujang paste. Stir together and bring to the boil. Cover with a lid and place in the oven for 20 minutes
Step 4
Add the sushi rice to an ovenproof dish with a pinch of salt and 250ml boiled water. Cover tightly with foil and put in the oven for 25 minutes
Step 5
Cut the cucumber into slices. Add to a bowl with rice vinegar, mayo, and the remaining gochujang paste
Step 6
Once cooked, remove pork from oven and leave covered for 4-5 minutes
