Instructions
Step 1
1. In a bowl, whisk together the cocoa powder, sugar substitute, and xanthan gum until well combined.
Step 2
2. Add the hot water to the cocoa mixture and whisk until smooth. This creates a concentrated chocolate mixture.
Step 3
3. In a separate bowl, beat the egg yolks with the vanilla extract until well combined.
Step 4
4. Gradually add the cocoa mixture to the egg yolks, whisking continuously to prevent curdling. Mix until smooth and well incorporated.
Step 5
5. Gently fold in the full-fat Greek yogurt into the cocoa-egg mixture until fully combined.
Step 6
6. In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
Step 7
7. Carefully fold the whipped egg whites into the chocolate mixture in batches, using a gentle folding motion to retain the light texture.
Step 8
8. Divide the mousse mixture into individual serving glasses or bowls.
Step 9
9. Refrigerate the mousse for at least 2 hours to allow it to set and chill.
Step 10
10. Before serving, you can garnish the mousse with a sprinkle of cocoa powder or a dollop of low-fat whipped cream, if desired.
