Instructions

Preheat oven to 170 degrees Celsius

Large saucepan

Cut circular - red onions.put in pan with olive oil.

Dice 3 garlic cloves put it in pan. Add spices. Stir, add lemon juice, stir.

Add mince once onions have softened.add soy sauce

Add a chicken stock cube liquified by hot water in a cup nearby

Add chopped carrots. Add a few small tomatoes Once the mince has softened and browned. Add x2 tomatoes from tin.add puree.soy sauce.salt.pepper.cover with lid.simmer

Once excess water has reduced add spinach to wilt.cover for 2 mins.add noodles to the mix to bulk up

Buy two wrap packs, assemble filling, then cheese, then fold the bottom of wrap then top then sides, press down gently then turn over the wrap. Put grated cheese all of each enchilada then puree on top and some salad cream drizzle all over enchiladas once packed into the tray. Put in oven for 5-8 mins
Step 10
Serve with salad and coleslaw
