Instructions

Step 1
1. Rinse the lentils and pick out any debris. Place them in the crockpot along with the vegetable broth, onion, carrots, celery, garlic, diced tomatoes (with juice), thyme, rosemary, paprika, salt, and pepper. Stir to combine.
Step 2
2. Cover the crockpot and cook on low heat for 6-8 hours, or until the lentils and vegetables are tender.
Step 3
3. Taste and adjust seasonings if needed. Serve hot, garnished with fresh parsley.
