Instructions

Scallion Oil

Step 1
Separate the whites from the greens for the scallion stalks.

Step 2
Place the scallion whites, garlic, and ginger in a pot. Add just enough oil to cover and bring to a simmer. Cook for about 3 hours until deeply caramelized.

Scallion Oil Noodles

Step 3
Cook your noodles to the package instructions (use your noodles of choice).
Step 4
In a pan over medium-low heat, add scallion oil, oyster sauce, dark soy sauce, hoisin sauce, and water. Bring to a boil and stir to combine (it is ok if it splits).
Step 5
Add your noodles and turn off the heat.
Step 6
Serve and garnish with chopped scallion greens.
