Instructions
Step 1
Start the desired amount of jasmine rice in your rice cooker. Typical rice:water ratio is 1 part rice, 1.5 parts water. Add a tbsp of sesame oil, stir, and start the rice cooker.
Step 2
Preheat your air fryer to 200C. Combine frozen battered cauliflower, courgette, and bean sprouts in a bowl. Toss with 1 tbsp sesame oil, then add half to the fryer basket. Cook for five minutes, toss, then cook for a few more minutes (time can vary, keep an eye). Transfer to a bowl and repeat with second half.
Step 3
Trim and wash pak choy. In a large pot, heat last tbsp sesame oil, then add garlic and soy sauce. Brown the garlic, then add 150ml of water and the pak choy and sauté until soft, mixing often to coat with the garlic mixture.
Step 4
Combine the hoisin and chili sauce. Once cauliflower, courgette, and bean sprouts are done, toss with the sauce. Add the spring rolls to the air fryer and cook for 5-10 minutes, depending on package instructions.
Step 5
Assemble the bowls with rice, sauced vegetables, and pak choy. Top with chopped spring onion and sesame seeds. Enjoy with spring rolls!
