This is a simple and delicious recipe that helps you know exactly what is in your granola. Makes approximately 8 cups. This granola recipe is very flexible. Feel free to change up the nuts, spices, and dried fruit to make your own favorite granola.

Instructions

Step 1
Preheat the oven to 350°F, and line a large rimmed baking sheet with parchment paper.

In a large bowl, stir to combine the oats, walnuts (or pecans), pepitas, salt, and cinnamon.

Melt coconut oil. Pour coconut oil, honey (or maple syrup), and vanilla onto oat mixture. Mix well until everything is coated.
Step 4
Pour mixture onto prepared baking sheet and use a large wooden spoon to spread into an even layer.

Bake approximately 10-12 minutes. Stir. Then bake another 10-12 minutes or until golden brown. (Don't worry, the granola will continue to crisp as it cools.)
Step 6
Allow the granola to cool completely before breaking it into pieces. Then, add in the dried cranberries. Granola can be stored in an airtight container at room temperature for up to 2 weeks or in a sealed freezer bag/container for up to 3 months.
