Step 1
Cook pasta of your choice like rigatoni until al dente in salted boiling water

Step 2
When the pasta is nearly done add a drizzle of olive oil to a pan and a tsp of chili flakes then heat for 1 minute .

Step 3
Toss the pasta into the oil then stir to coat in the chili oil . Add 1 x 250 gram tub of lemon ricotta ( I have a recipe up for this from yesterday ) if you only have regular ricotta to hand add twice as much zest and a Squeeze of lemon juice !

Step 4
Stir in the ricotta then add the zest of one lemon a ladle of pasta water black pepper and a little salt and one cup of Parmesan cheese and stir together until creamy
Step 5
Dry toast the sunflower seeds for a minute until golden ( or use pine nuts ) then squeeze lemon juice over the rocket and add salt . Plate pasta with sunflower seeds rocket and add some more Parmesan shavings and enjoy
