Step 1
Heat half the oil in a frypan and fry the courgette to soften. Remove from the heat. Pat dry with paper towel.

2. Whisk eggs in a bowl. Stir in the feta cheese and season with salt and pepper.
Step 3
Heat the remaining olive oil in the frying pan over medium-low heat. Pour in the egg mixture and cook for few minutes until it's starting to set around the edges.
Step 4
Add the courgette over half the egg and fold over the empty side. Allow to cook for a few more minutes until egg is set.
Step 5
5. Flip out of the pan onto a plate, sprinkle with parsley and serve.
