Step 1

Dice onions, carrots and celery. Peel and crash garlic. Cube potatoes. Break cauliflower into florets.
Step 2
Heat oil in large saucepan/Dutch oven over med-high heat. Add onions and cook until translucent. Then add carrots and cook for 5mins. Add celery cook until soft.
Step 3
Add garlic and thyme to pot and cook until fragrant. Then add all the water, Vegeta and potatoes. Allow to come to boil. Then add the cauliflower - simmer about 15mins or until everything is soft
Step 4
Soup can be served at this point or blend until desired consistency is reached.
