Instructions
Step 1
Melt 1 tsp coconut oil in small saucepan over medium heat
Step 2
Sauté scallions and garlic for 3 minutes until soft
Step 3
Add tomatoes and saute for 3 minutes, remove and set aside
Step 4
In a medium bowl whisk eggs, thyme, basil, chives, oregano, salt, nutmeg and pepper
Step 5
Pour egg mixture into large heated skillet with 2 tsp melted coconut oil, do not stir
Step 6
Let cook untol edges are firm. Sppon tomato mixture onto half of the eggsm fold uncovered side and cook for 1 minute
Step 7
Cut in half, sprinkle with parsley
