Ingredients

3 capsfresh shiitake mushrooms
stem removed

225gfirm tofu
drained, cubed, pan-fried & seasoned with salt

1carrot
small, chopped

110gNapa cabbage
chopped

5beancurd puff

1 bunchmung bean thread
soaked until pliable

32gsugar snap peas
blanched in hot boiling water for 3-5 mins, then rinse with cold water

¼ cuppeanuts
cooked in hot water until soft & drained

wood ear mushrooms
soaked until soft

40glotus roots
sliced

oil

salt
to taste
Sauce
Instructions
Step 1
In a heated non-stick pan with 2 tablespoons oil, saute mushrooms until fragrant, then add carrot, lotus roots and Napa cabbage stem continue to cook until carrot is tender





Step 2
Add all other vegetables and sauce except Napa cabbage leaves, sugar snap peas and pan-fried tofu
Step 3
Place a lid over and let simmer over low heat until mung bean thread is soft. Add more water, if needed and season accordingly
Step 4
Stir in the last 3 ingredients, add a few dashes of white pepper and quick toss until all veggies are well combined
Step 5
Serve with rice or noodles
