Instructions

Step 1
Heat the oil and roll balls of the beef with salt and pepper. Fry the balls. Remove the meat balls when done.

While frying the balls, cut the onion and carrot in a food processor
Step 3
Use the same pan and fry the slices bacon or pancetta.

Add the onion and carrots and create the stock

Add white wine and reduce it

Add the tomato paste and let it turn dark red
Step 7
Add the stock, nutmeg and bay leaf and cook and reduce
Step 8
Cook the pasta al dente with salted water. Add balls back to sauce.
Step 9
Grate the parmigiano cheese to taste.
Step 10
Sauce done? Remove the bay leaf, add cooking cream. Need more moisture? Add the pasta water
Step 11
Finish the pasta in the sauce and add the cheese.
Step 12
Serve with rocket salad.
